Easy Memorial Day Recipe- Camper Cowboy Nachos

This recipe came about during the holiday season when I was trying to think of an easy dish to make with limited resources that also combined some of our favorite comfort foods. Inspired by a tri-tip nacho dish, I crafted into creation our “Camper Cowboy Nachos”. This dish could easily be made on the stovetop (or campfire) in a cast iron skillet, but in the interest of larger quantities, I use a 13 x 9 x 2-inch baking dish in the oven.


  • 1 package of pre-made pulled meat (our favorite is Trader Joe’s pulled pork microwave variety, but we also like their pulled brisket and chicken)
  • 1 can of baked beans (we prefer any kind that comes with maple flavoring)
  • 1 bottle of your favorite BBQ sauce (we like sweet BBQ, so I use Trader Joe’s Kansas City Style BBQ sauce)
  • 3-4 stalks of green onion
  • 1 small container of either lite/ or regular sour cream
  • 1 bag of shredded Monterey Jack or Colby cheese or whichever variety you prefer
  • 1 bag of blue corn chips (* to make it more patriotic, use blue & red corn chips if available)
  • 1 jar of Cowboy Caviar (this is a specific product at Trader Joe’s. A salsa containing corn, black beans, bell peppers, and other ingredients.)
  • 1- 2 jalapeños
  • 1 package of pre-made guacamole (we often skip this ourselves, due to fridge space)


Pre-heat the oven to 350 degrees. If using a pre-made microwavable pulled meat, heat in the microwave as instructed.


In a baking dish, layer in the following order: chips, baked beans, Cowboy Caviar, pulled meat, BBQ sauce, and cheese. I do a second layer on top in the same order, but if you are using a cast iron skillet or a shallow baking dish, keep it to a single layer with heaping portions. Bake for about 10 minutes and check to see if the cheese looks done. If it needs more time, bake for additional minutes as needed.


While it is baking, slice the green onions and optional jalapeño.


When done baking, pull from the oven and garnish with sliced green onions, sour cream, guacamole, and jalapeño. Comfort food at its best!


Note: If you end up baking it too long and the chips get soft, no worries, bust out your forks and you now have a “Cowboy Casserole”, tastes just as amazing and sounds inventive!
